Casa Crespo is Oaxaca in its kitchen. Tradition lives there, where chef Oscar Carrizosa, (originally from the Mixteca region) mixes the ingredients of the 16 ethnicities of Oaxaca with the original seasoning that he inherited from his grandma. It´s the perfect place to get to know the flavors and aromas of Oaxacan food in the classes that Oscar gives. Oscar, who is very friendly, also shows how to smell and identify the aromas that come of the dishes. He presents menu options and the students decide what they would like to cook. There is no fixed menu. He teaches how to cook 3 types of tortillas, 3 types of salsas, an appetizer, soup, mole, dessert and drink. Dishes that strive to remain in the taste buds and memory of those who love good eating.

In this Moles tasting it will not only be a test of each one, but rather you will have the opportunity to listen to the history and rituals of Oaxacan food, each mole will be served in the different ways in which we locals enjoy it every day. We will have dynamics where you will learn about the general ingredients of each mole and you will be surprised to discover the fusions of flavors. Each mole is a different dish, which will make you end up very satisfied and happy to have joined us. We have unlimited mezcal along with the moles, so that you also end up being a mezcal expert at the end of the tasting. It is not a cooking class, but we also offer a class where you can learn to make two of the moles that we will present to you here, so you can ask us about that class.


Earth, Corn & Fire: Tasting the Roots of Oaxacan Cuisine


On this tour in Oaxaca, we’ll get an edible crash course on the elements that are a bedrock of traditional Oaxacan cooking, as well as on how they are being safeguarded. We’ll go through neighborhood markets and visit home-based restaurants and the stalls of streets vendors, stopping to taste some of Oaxaca’s most iconic dishes and street snacks, from memelas to eggs cooked on the comal. We’ll taste local corn in various forms and see how it’s transformed from kernel to tortilla, in the process learning about the key role it still plays in Oaxacan cuisine and culture. Along the way we’ll meet market vendors who have been holding steady for decades and even visit the gallery of a group of young artists. We’ll end our journey with a meal in a family-run market restaurant, sampling several different types of the city’s most famous creations, mole,a dish that much like Oaxaca’s rich culinary heritage itself, is the result of numerous ingredients being lovingly and carefully mixed together.

In this class you will make delicious memelitas with your own hands, from preparing the dough to making a delicious molcajete sauce to accompany them. I will teach you recipes that you can easily repeat at home. We will cook in a traditional smoke kitchen, with utensils that have been used for generations in my family, you will discover our traditions and I will give you advice that will help you better understand and taste the dishes of Oaxacan cuisine. When we prepare the mole, I will teach you how to select the best ingredients that have given Oaxacan mole worldwide fame and recognition. Walk around the main square where you will admire the beauty of the Santo Domingo temple that was part of a convent, now transformed into one of the best museums of colonial and pre-Colombian art, and where there are valuable objects from Monte Alban archeological site; continue along the tourist walkway, (pedestrian street) admiring its green quarry buildings, you will find the Cathedral, built by the Dominican monks in the 16th century, you will see the outside of the Macedonio Alcalá Theater, an architectural jewel of the City of Oaxaca, later you will go to the chocolate mills to talk and learn about the ingredients for the preparation of this exquisite drink. With the help of our chef you will learn the history behind the cacao, the origin, the use of chocolate and cacao in native cultures of Mexico. You will also learn the traditional recipe to make chocolate and the use of chocolate in traditional cuisine. We´ll be toasting cacao beans, grinding, making chocolate bars and then we will use the chocolate in making a simple mole, hot chocolate and Oaxacan chocolate ice cream.
